Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper. Sauté until softened, about 5-7 minutes.

Add Spices and Tomatoes
Stir in the minced garlic, ground cumin, paprika, chili powder, salt, and black pepper. Cook for another minute until fragrant. Add the canned crushed tomatoes and stir well.

Simmer the Sauce
Bring the mixture to a simmer and cook for about 10 minutes, until slightly thickened. Taste and adjust seasoning if necessary.

Make Wells for Eggs
Use a spoon to create two small wells in the sauce. Crack an egg into each well.

Garnish and Serve
Remove from heat, sprinkle with fresh parsley or cilantro, and serve immediately with warm pita bread on the side.
