Marinate the Lamb
In a large bowl, combine minced garlic, ground cumin, ground coriander, paprika, cinnamon, salt, black pepper, and olive oil. Add the lamb shoulder, ensuring it is well coated with the spice mixture. Cover and refrigerate for at least 2 hours, preferably overnight.

Prepare the Skewers
If using wooden skewers, soak them in water for 30 minutes to prevent burning. If using metal skewers, ensure they are clean and ready for use.

Skewer the Lamb
Remove the marinated lamb from the refrigerator and cut it into 2-inch cubes. Thread the lamb cubes onto the skewers, leaving a little space between each piece for even cooking.

Grill the Kebabs
Preheat a grill or grill pan over medium-high heat. Place the skewered lamb on the grill and cook for 8-10 minutes, turning occasionally, until the lamb is browned and cooked to your desired doneness.

Serve
Remove the kebabs from the grill and let them rest for a few minutes. Serve hot with spicy schug sauce and your choice of sides.
