    Prepare the Corn Schnitzel

    Coat the corn schnitzel in breadcrumbs and pan-fry until golden brown and crispy. Set aside.

    Make the Slaw

    In a large bowl, combine the shredded carrots and sweet corn kernels. Toss well.

    Prepare the Sumac Vinaigrette

    In a small bowl, whisk together the olive oil, apple cider vinegar, sumac, salt, and black pepper until well combined.

    Make the Green Tahina

    In a separate bowl, mix tahini, water, lemon juice, minced garlic, and chopped parsley until smooth and creamy.

    Assemble the Salad

    In a large serving bowl, add the mixed greens, corn & carrot slaw, and chopped walnuts. Drizzle with sumac vinaigrette and green tahina. Top with crispy corn schnitzel.
