Directions

  1. 1

    Prepare the Israeli Salad

In a bowl, combine chopped cucumbers, tomatoes, red onion, and parsley. Drizzle with lemon juice and olive oil, add salt and pepper to taste, and mix well.

  2. 2

    Boil the Eggs

Place the eggs in a pot and cover with water. Bring to a boil, then reduce heat and simmer for 9-12 minutes. Once cooked, transfer the eggs to an ice bath to cool before peeling.

  3. 3

    Prepare Feta

In a small bowl, combine cubed feta cheese with dried oregano, drizzle with a little olive oil, and mix gently.

  4. 4

    Assemble the Platter

On a large platter, arrange the Israeli salad, hard boiled eggs (cut in halves or quarters), hummus, olives, pickles, marinated feta, lox, and pita bread.

  5. 5

    Serve

Serve the platter with additional lemon wedges and olive oil for drizzling if desired.
