Falafel Preparation

    Soak the Chickpeas

    Rinse the dried chickpeas and soak them in water overnight or for at least 8 hours until they are softened.

    Prepare the Mixture

    Drain and rinse the soaked chickpeas. In a food processor, combine chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, and pepper. Pulse until the mixture is coarsely blended.

    Add Flour and Water

    Transfer the mixture to a bowl and stir in the flour and water until well combined. If the mixture is too wet, add a little more flour.

    Form the Falafel Balls

    Using your hands, form the mixture into small balls or patties, about 1-2 inches in diameter.

    Fry the Falafel

    Heat oil in a deep frying pan over medium heat. Once the oil is hot, carefully drop the falafel balls into the oil, frying them in batches until golden brown and crispy, about 3-4 minutes per side.

    Drain and Serve

    Remove the falafel from the oil and drain on paper towels. Serve warm with tahini sauce.
