Cook the Filling
In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, and sauté until softened. Add ground beef or shredded chicken, cumin, salt, and pepper. Cook until meat is browned and cooked through, about 7-10 minutes. Remove from heat.

Prepare the Enchiladas
Preheat your oven to 350°F (175°C). Take a tortilla and spoon some of the meat mixture into the center. Roll the tortilla tightly around the filling and place seam-side down in a baking dish. Repeat with remaining tortillas and filling.

Add Sauce and Cheese
Pour mild enchilada sauce evenly over the filled tortillas, making sure they are well covered. Sprinkle shredded cheese over the top.

Serve
Serve the enchiladas warm, alongside Mexican rice and refried beans or fries.
