Prepare the Filling
In a skillet, heat olive oil over medium heat. Add the cooked meat of your choice and season with salt and pepper. Stir in the refried beans until heated through.
Assemble the Burrito
Lay the flour tortilla flat on a clean surface. Spoon the meat and bean mixture in the center, followed by a scoop of Mexican rice. Drizzle with mild enchilada sauce and top with shredded cheese.
Roll the Burrito
Fold the sides of the tortilla over the filling, then roll from the bottom up to enclose the filling completely. Place seam-side down on a plate.
Heat the Burrito
Optional: For a crispy burrito, you can place it in a skillet over medium heat for 2-3 minutes on each side until golden brown and the cheese is melted.
