Chicken Preparation
- 1
Prepare the Chicken
Season the chicken breasts with salt and black pepper on both sides.
- 2
Dredge the Chicken
Set up a dredging station: place flour in one shallow dish, beat the eggs in another, and place the breadcrumbs in a third dish. Dip each chicken breast in flour, shaking off the excess, then in the beaten eggs, and finally coat with breadcrumbs.
- 3
Fry the Chicken
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the breaded chicken breasts and fry for about 4-5 minutes on each side or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.
Assembly
- 4
Assemble the Sub
Preheat the oven to 375°F (190°C). Place the fried chicken breasts on a baking sheet. Spoon marinara sauce over each piece and sprinkle with mozzarella and Parmesan cheese.
- 5
Bake
Bake in the preheated oven for 10-15 minutes or until the cheese is melted and bubbly.
- 6
Prepare the Roll
While the chicken is baking, slice the submarine rolls in half. Optionally, toast them lightly in the oven or on a skillet.
- 7
Final Assembly
Once the chicken is done, place each piece on a roll, add fresh basil leaves, and close the sandwich.
