Preparing the Sausages

Cook the Sausages
In a large skillet, heat the olive oil over medium heat. Add the Italian sausage links and cook for about 8-10 minutes, turning occasionally, until they are browned and cooked through.

Sauté the Vegetables
While the sausages are cooking, slice the green bell pepper and red onion. Mince the garlic cloves. In a separate pan, add a little olive oil and sauté the bell pepper, onion, and garlic over medium heat for about 5-7 minutes until they are soft and aromatic.
Assembling the Sub

Prepare the Sub Rolls
Once the sausages are cooked, slice the sub rolls lengthwise but not all the way through. Place them on a baking sheet.

Place one sausage link inside each sub roll. Top with the sautéed vegetables.

Pour marinara sauce over the sausages and vegetables, then sprinkle shredded mozzarella cheese on top.
