Caramelize the Onions
Slice the medium onion thinly. In a skillet, heat 1 tablespoon of oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are soft and golden brown, about 15 minutes.

Prepare the Smash Sauce

Mix the Smash Sauce
In a bowl, combine the mayonnaise, ketchup, yellow mustard, pickle relish, garlic powder, onion powder, salt, and black pepper. Mix well until all ingredients are combined.
Cooking the Burger

Form and Cook the Patties
Divide the ground beef into two equal portions and form them into patties. Heat a skillet or griddle over high heat. Place the patties on the hot surface and smash them down using a spatula to create a flat surface. Season with salt and black pepper. Cook for about 3-4 minutes on one side.

Add Cheese
Flip the patties and immediately place the cheddar cheese on top of each patty. Cook for another 2-3 minutes, or until the cheese is melted and the burger is cooked to your desired doneness.
Assembly

Assemble the FAT BOY
Spread a generous amount of smash sauce on the bottom half of each burger bun. Place the cooked burger patty with melted cheddar on top. Add the crumbled bacon and caramelized onions. Top with the other half of the burger bun. Serve immediately.
