Chicken Preparation

    Prepare Chicken

    Preheat your oven to 375°F (190°C). Season both sides of the chicken breasts with salt and black pepper.

    Dredge Chicken

    Set up a dredging station with three shallow bowls: one with flour, one with beaten eggs, and one with bread crumbs mixed with grated Parmesan cheese. Dip each chicken breast first in flour, shaking off the excess, then in the beaten eggs, and finally in the bread crumb mixture. Ensure each piece is evenly coated.

    Fry Chicken

    In a large skillet, heat enough olive oil over medium heat to cover the bottom. Add the breaded chicken breasts and cook for about 4-5 minutes per side, or until golden brown. Transfer the fried chicken to a paper towel-lined plate to drain excess oil.

Sauce Preparation

    Make the Sauce

    In the same skillet, add 2 tablespoons of olive oil. Sauté minced garlic for about 30 seconds until fragrant. Add the crushed tomatoes, oregano, basil, sugar, salt, and black pepper. Stir well and let it simmer for about 10-15 minutes to thicken slightly.

Assembly and Baking

    Assemble the Dish

    In a baking dish, spread some of the sauce on the bottom. Place the fried chicken breasts on top and cover each piece with more sauce. Sprinkle shredded mozzarella cheese evenly over the top.

    Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.

    Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
