Directions

  1. 1

    Prepare the Sushi Rice

Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it sit covered for 10 minutes.

  2. 2

    Season the Rice

In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

  3. 3

    Prepare the Fillings

Slice the avocado in half, remove the pit, and scoop out the flesh. Cut the avocado into thin slices. Julienne the cucumber into thin strips.

  4. 4

    Roll the Sushi

Place a bamboo sushi mat on a clean surface and lay a sheet of nori, shiny side down. Wet your hands to prevent sticking and grab about a handful of sushi rice. Evenly spread the rice over the nori, leaving about 1 inch at the top edge. Lay the crab meat, avocado slices, and cucumber strips in a line across the center of the rice.

  5. 5

    Form the Roll

Using the bamboo mat, carefully roll the nori away from you, tucking it over the fillings. Continue rolling while applying gentle pressure until the roll is formed. Seal the edge with a little water.

  6. 6

    Slice the Rolls

Using a sharp, wet knife, slice the roll into 6-8 pieces. Repeat with the remaining ingredients.

  7. 7

    Serve

Arrange the sushi rolls on a plate and serve with soy sauce, wasabi, and pickled ginger.
