    Marinate the Chicken

    In a large bowl, combine the chicken breast pieces and buttermilk. Cover and refrigerate for at least 1 hour, or overnight for best results.

    Prepare the Coating

    In a separate bowl, mix together the flour, cornstarch, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.

    Heat the Oil

    In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Chicken

    Remove the chicken from the buttermilk and let any excess drip off. Dredge each piece in the flour mixture, pressing gently to adhere.
