Caramelize the Onions
In a skillet over medium heat, melt 1 tablespoon of butter. Add the sliced onion and cook, stirring occasionally, until the onions are soft and caramelized, about 15-20 minutes. Season with salt and pepper to taste. Remove from heat and set aside.

Prepare the Special Sauce
In a small bowl, mix together mayonnaise, ketchup, Dijon mustard, garlic powder, salt, and pepper to create Shari's special sauce.

Assemble the Patty Melt
Spread the special sauce on one side of each slice of sourdough bread. On two slices, layer caramelized onions and Tillamook cheddar cheese. Top with the other two slices of bread, sauce side down.

Cook the Patty Melt
In the same skillet, melt the remaining tablespoon of butter over medium heat. Grill the sandwiches until golden brown and the cheese is melted, about 3-4 minutes per side.

Serve
Once cooked, remove from heat, slice in half, and serve warm. Enjoy your delicious sourdough patty melt!
