1. Prepare the Pie Crust

In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Bake at 350°F (175°C) for 8-10 minutes, or until golden. Remove from the oven and let cool.

2. Make the Filling

In a large mixing bowl, whisk together the sour cream, fresh lemon juice, lemon zest, eggs, vanilla extract, and salt until smooth and well combined.

3. Bake the Pie

Pour the filling into the cooled pie crust. Bake at 350°F (175°C) for 30-35 minutes, or until the filling is set and slightly jiggles in the center. Remove from the oven and let cool to room temperature.

4. Chill and Serve

Refrigerate the pie for at least 4 hours, or until fully chilled. Before serving, dust the top with powdered sugar if desired. Slice and enjoy!
