In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

Prepare the Egg Mixture

In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Add the diced country ham and sauté for about 2-3 minutes until heated through. Remove the ham from the skillet and set aside.

Cook the Ham

In the same skillet, add the remaining tablespoon of butter and allow it to melt. Pour in the egg mixture and cook for about 2-3 minutes, or until the edges begin to set.

Make the Omelette

Sprinkle the sautéed ham and shredded cheddar cheese over half of the omelette. If desired, add chopped chives.

Add Fillings

Once the cheese starts to melt and the omelette is mostly cooked through, carefully fold the omelette in half over the fillings. Cook for an additional minute, then slide onto a plate.

Fold and Finish

Cut the omelette in half if desired, and serve hot.
