In a bowl, combine the shredded grilled chicken, pico de gallo, and season with salt and black pepper to taste.

Prepare the filling

Heat a large skillet over medium heat and add 1 tablespoon of olive oil.

Heat the skillet

Place one tortilla in the skillet, then layer half of the cheese, followed by the chicken mixture, and top with the remaining cheese. Cover with a second tortilla.

Assemble the quesadilla

Cook for about 3-4 minutes on one side or until golden brown, then carefully flip and cook for another 3-4 minutes until the cheese is melted and the other side is golden.

Cook the quesadilla

Repeat the process with the remaining tortillas and filling.

Cut the quesadillas into wedges and serve hot with salsa and sour cream on the side.
