Preheat the Oven

Scrub the Russet potatoes under cold water to remove any dirt. Pat them dry with a towel.

Prepare the Potatoes

Prick each potato several times with a fork. Rub the potatoes with olive oil and sprinkle salt generously over them.

Season the Potatoes

Place the potatoes directly on the oven rack or on a baking sheet. Bake for 45-60 minutes, until the skin is crispy and a fork easily pierces the flesh.

Bake the Potatoes

Remove the potatoes from the oven. Cut a slit down the center of each potato, add butter, sour cream, and sprinkle with chives. Season with black pepper to taste.
