Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick, to create fries.
Soak the Fries
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch, making the fries crispier.
Preheat the Oven
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
Dry the Fries
After soaking, drain the fries and pat them dry with a clean kitchen towel.
Season and Bake
In a large bowl, toss the fries with truffle oil, salt, and pepper until evenly coated. Spread them out in a single layer on the prepared baking sheet. Bake for 25-30 minutes or until golden brown and crispy, flipping halfway through.
Add Parmesan
Once the fries are done baking, remove them from the oven and immediately sprinkle the grated Parmigiano Reggiano over the hot fries. Toss to combine.
Garnish and Serve
Finish with freshly chopped parsley and serve immediately. Enjoy your truffle parmesan fries!
