Prepare the Steak

Remove the rib eye steak from the refrigerator and let it rest at room temperature for about 30 minutes before cooking. This ensures even cooking.

Season the Steak

Generously season both sides of the rib eye steak with kosher salt, freshly ground black pepper, and garlic powder. Press the seasonings into the meat to adhere.

Preheat the Pan

Heat a cast-iron skillet or heavy-bottomed pan over medium-high heat. Add the olive oil and allow it to heat until shimmering.

Sear the Steak

Once the oil is hot, carefully add the rib eye steak to the pan. Sear for about 4-5 minutes on one side until a crust forms. Do not move the steak around during this time.

Flip and Add Aromatics

Flip the steak and add butter and rosemary sprigs to the pan. Continue to cook for another 4-5 minutes for medium-rare, spooning the melted butter over the steak for added flavor.

Check for Doneness

Use a meat thermometer to check the internal temperature. For medium-rare, aim for 130°F (54°C). Cook longer if desired.

Rest and Serve

Remove the steak from the pan and let it rest for 5-10 minutes before slicing. This allows the juices to redistribute. Slice against the grain and serve.
