Prepare the Oysters

Preheat your oven to 400°F (200°C). Place the oysters in their half shells on a baking sheet.

Cook the Pancetta

In a skillet, melt 2 tablespoons of butter over medium heat. Add the diced pancetta and cook until crispy. Remove and set aside, leaving the fat in the pan.

Sauté the Vegetables

In the same skillet, add the shallots and garlic, cooking until shallots are translucent. Add the chopped spinach and cook until wilted.

Make the Cream Sauce

Stir in the heavy cream and bring to a simmer. Add the grated Parmesan cheese, lemon juice, salt, and black pepper. Stir until the cheese is melted and the sauce is creamy.

Combine Ingredients

Add the crispy pancetta to the cream sauce. Mix well.

Assemble the Oysters

Spoon the cream sauce mixture over each oyster in its shell. Top with breadcrumbs and a sprinkle of chopped parsley.

Bake

Bake in the preheated oven for 10-12 minutes, or until the topping is golden brown and the oysters are cooked through.
