Prepare the Noodles

Cook Rice Noodles
Bring 1 liter of water to a boil in a pot. Add 200g of rice noodles to the boiling water and cook according to package instructions, usually about 4-6 minutes until tender. Drain and set aside.
Make the Broth

Prepare the Broth
In a large pot, heat 1 tablespoon of sesame oil over medium heat. Add 3 minced garlic cloves and 1 tablespoon of grated ginger, sautéing for about 1-2 minutes until fragrant. Pour in 4 cups of vegetable broth, 3 tablespoons of soy sauce, and 2 tablespoons of sriracha sauce. Stir well and bring to a simmer.

Chop Vegetables
Thinly slice 2 stalks of green onions, chop 1 medium bell pepper, and julienne 1 medium carrot. Set aside. Roughly chop 0.5 cups of fresh cilantro and cut 1 medium lime into wedges.
Assemble the Bowl

Combine Ingredients
In serving bowls, place a portion of the cooked rice noodles. Ladle the spicy broth over the noodles and top with chopped vegetables and cilantro. Serve with lime wedges on the side for squeezing over the bowl.
