Dough Preparation
Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour and salt.
Add Water
Gradually add water to the flour mixture while stirring until the dough begins to come together.
Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.
Rest the Dough
Cover the dough with a damp cloth and let it rest for at least 30 minutes.
Filling Preparation
Combine Ingredients
In a mixing bowl, combine ground pork, chopped chives, minced garlic, minced ginger, soy sauce, sesame oil, salt, and black pepper.
Mix Filling
Use your hands to thoroughly mix the filling until well combined. Set aside.
Dumpling Assembly
Roll the Dough
On a floured surface, roll out the rested dough into a thin sheet, about 1/8 inch thick.
Cut Wrappers
Using a round cutter (about 3 inches in diameter), cut out circles from the dough.
Fill Dumplings
Place about 1 tablespoon of filling in the center of each dough circle. Fold the dough over to create a half-moon shape and pinch the edges to seal.
Cooking Dumplings
Prepare Steamer
Fill a steamer pot or bamboo steamer with water and bring it to a boil.
Steam Dumplings
Place the dumplings in the steamer basket, making sure they don't touch. Steam for about 15-20 minutes until cooked through.
