Prepare the Filling
In a skillet over medium heat, cook the ground beef or shredded chicken until fully cooked. Drain excess fat if necessary. Stir in cheddar cheese until melted and well combined. Remove from heat.

Assemble the Flautas
Take a flour tortilla and fill it with about 1/4 cup of the meat and cheese mixture. Roll the tortilla tightly and secure with a toothpick if necessary. Repeat with remaining tortillas.

Fry the Flautas
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully place the rolled flautas in the oil and fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Serve
Serve the flautas topped with sour cream and guacamole. Accompany with Mexican rice and either black or refried beans.
