Preparation and Assembly

Sauté the Spinach

In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent. Add spinach and cook until wilted. Season with salt and pepper, then remove from heat.

Prepare the Enchiladas

Preheat the oven to 350°F (175°C). In a separate bowl, mix the sautéed spinach with 1/2 cup of the vegetable sauce. Take a corn tortilla, fill it with the spinach mixture, roll it up, and place it seam-side down in a baking dish. Repeat with remaining tortillas.

Bake

Pour the remaining vegetable sauce over the enchiladas. Bake in the preheated oven for 20 minutes, until heated through.

Serve

Remove from oven and top with chili con queso. Serve with a side of Mexican rice and a dollop of sour cream.
