Spinach Enchiladas Recipe
Two enchiladas stuffed with sauteed spinach and baked in a light vegetable sauce. Finished with our zesty chili con queso. Served with Mexican rice and sour cream.

Preparation and Assembly
Sauté the Spinach
In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent. Add spinach and cook until wilted. Season with salt and pepper, then remove from heat.
Bake
Pour the remaining vegetable sauce over the enchiladas. Bake in the preheated oven for 20 minutes, until heated through.
Serve
Remove from oven and top with chili con queso. Serve with a side of Mexican rice and a dollop of sour cream.
