Prepare Filling
In a mixing bowl, combine the ground beef or shredded chicken, cheddar cheese, salt, and black pepper. Mix well.
Assemble Flautas
Take one tortilla and place about 2 tablespoons of the filling mixture in the center. Roll the tortilla tightly around the filling and secure with a toothpick if necessary. Repeat with remaining tortillas and filling.
Fry Flautas
In a large skillet, heat the vegetable oil over medium heat. Once hot, carefully add the flautas in batches, frying until golden brown and crispy, about 3-4 minutes each side. Remove and drain on paper towels.
Serve
Serve the flautas hot, topped with sour cream and guacamole. Accompany with Mexican rice and refried beans.
