Prepare the Mexican Rice
Cook the Mexican rice according to package instructions. Set aside once cooked.

Fill the Tortillas
Spread 2 tablespoons of refried beans and 2 tablespoons of shredded cheese on each tortilla. Roll the tortilla tightly and place seam-side down in a greased baking dish.

Add Sauce and Cheese
Pour the enchilada sauce over the rolled tortillas and sprinkle the remaining cheese on top.

Bake
Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

Serve
Let the enchiladas cool for a few minutes, then garnish with fresh cilantro. Serve with Mexican rice on the side.
