Prepare the Filling
In a skillet over medium heat, warm the shredded beef or chicken. Season with salt and pepper. Remove from heat.

Assemble the Flautas
Take a corn tortilla and place a few tablespoons of the meat mixture along one edge. Roll tightly and secure with a toothpick if needed. Repeat with remaining tortillas.

Fry the Flautas
In a large skillet, heat vegetable oil over medium-high heat. Fry the flautas in batches until golden brown and crispy, about 2-3 minutes per side. Drain on paper towels.

Prepare the Sides
While the flautas are frying, heat the black beans and Mexican rice in separate pots.

Serve
On a plate, arrange two flautas. Serve with black beans, Mexican rice, and top with sour cream, guacamole, diced tomatoes, and shredded cheese.
