    Cook the Spaghetti

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.

    Prepare the Pancetta

    While the spaghetti is cooking, cut the pancetta into small cubes. In a large skillet over medium heat, cook the pancetta until it is crispy, about 5-7 minutes. Remove from heat and set aside.

Making the Sauce

    Mix the Eggs and Cheese

    In a mixing bowl, whisk together the eggs and grated Pecorino Romano cheese until well combined. Season with black pepper to taste.

    Combine Ingredients

    Add the drained spaghetti to the skillet with the pancetta (off the heat). Quickly pour the egg and cheese mixture over the hot pasta, tossing continuously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

    Serve

    Divide the spaghetti carbonara among plates. Garnish with additional Pecorino Romano cheese, black pepper, and fresh parsley if desired. Serve immediately.
