Gnocchi Preparation

    Cook Potatoes

    Place the potatoes in a large pot, cover with water, and add a pinch of salt. Bring to a boil and cook until tender, about 20-25 minutes. Drain and let cool slightly.

    Make Dough

    Once potatoes are cool enough to handle, peel them and pass through a potato ricer or mash until smooth. In a large mixing bowl, combine the potato puree, flour, egg, and salt. Mix until a dough forms.

    Shape Gnocchi

    Divide the dough into four sections. On a floured surface, roll each section into a long rope about 1/2 inch thick. Cut into 1-inch pieces. If desired, use a fork to create ridges on each piece.

Tomato Sauce Preparation

    Sauté Garlic

    In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

    Cook Sauce

    Add the canned crushed tomatoes, oregano, salt, and black pepper to the saucepan. Simmer for about 15-20 minutes, stirring occasionally, until the sauce thickens.

    Finish Sauce

    Tear the fresh basil leaves and stir them into the sauce just before serving. Adjust seasoning with more salt and pepper if necessary.

Cooking Gnocchi

    Boil Gnocchi

    Bring a large pot of salted water to a boil. Carefully drop the gnocchi into the boiling water. Cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon.

    Serve

    Toss the cooked gnocchi with the tomato sauce in a large serving bowl. Garnish with grated Parmesan cheese and additional fresh basil leaves if desired.
