Panna Cotta Base

Method

Panna Cotta Base

  1. 1

    Prepare Gelatin

In a small bowl, sprinkle the unflavored gelatin over the water and let it sit for about 5-10 minutes until it blooms.

  2. 2

    Heat Cream and Milk

In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat, stirring occasionally until the sugar dissolves and the mixture is hot but not boiling.

  3. 3

    Add Vanilla and Gelatin

Remove the saucepan from heat. Stir in the vanilla extract and the bloomed gelatin until completely dissolved.

  4. 4

    Pour into Molds

Pour the mixture into individual serving cups or molds. Let them cool to room temperature, then refrigerate for at least 4 hours or until set.

Berry Sauce

  1. 5

    Prepare the Berries

In a saucepan, combine the mixed berries and granulated sugar. Cook over medium heat until the berries start to break down and release their juices, about 5-7 minutes.

  2. 6

    Add Lemon Juice

Stir in the lemon juice and continue to cook for an additional 2-3 minutes until the sauce thickens slightly.

  3. 7

    Cool the Sauce

Remove from heat and let the berry sauce cool to room temperature. You can also strain it if you prefer a smoother sauce.
