Method

Cooking Pasta

  1. 1

    Boil Water

In a large pot, bring salted water to a boil.

  2. 2

    Cook Pasta

Add 8 cups of pasta to the boiling water and cook according to package instructions until al dente. Drain and set aside.

Preparing Vegetables

  1. 3

    Prep Vegetables

While the pasta is cooking, wash and chop the bell peppers, zucchini, cherry tomatoes, carrots, and asparagus into bite-sized pieces.

Making the Sauce

  1. 4

    Heat Olive Oil

In a large skillet, heat 4 tablespoons of olive oil over medium heat.

  2. 5

    Sauté Garlic

Add 3 teaspoons of minced garlic to the skillet and sauté for about 1 minute until fragrant.

  3. 6

    Add Vegetables

Add the prepared vegetables (bell peppers, zucchini, cherry tomatoes, carrots, and asparagus) to the skillet. Sauté for about 5-7 minutes until the vegetables are tender but still crisp.

  4. 7

    Season the Mixture

Sprinkle 1 teaspoon of salt and 1 teaspoon of black pepper over the vegetables. Stir well to combine.

Combining Everything

  1. 8

    Combine Pasta and Vegetables

Add the cooked pasta to the skillet with the sautéed vegetables. Toss well to combine.

  2. 9

    Add Cheese and Basil

Remove from heat and stir in 1 cup of grated Parmesan cheese and 0.5 cups of chopped fresh basil. Toss until the cheese is melted and everything is well combined.

Serving

  1. 10

    Serve

Divide the Pasta Primavera into serving bowls and enjoy hot. Optionally, garnish with additional basil or cheese.
