Prepare the Potatoes

Wash the small potatoes thoroughly under cold water. If using larger potatoes, cut them into halves or quarters to ensure even cooking.

Season the Potatoes

In a large bowl, toss the washed potatoes with olive oil and salt until evenly coated.

Set up the Smoker

Preheat your smoker to 225°F (107°C). If using a stovetop smoker, add your preferred wood chips according to the manufacturer's instructions.

Smoke the Potatoes

Place the seasoned potatoes in the smoker and smoke for about 1 hour or until they are tender and infused with a smoky flavor.

Prepare the Scallion Crème Fraîche

While the potatoes are smoking, finely chop the scallions and mix them with the crème fraîche in a bowl. Add a pinch of salt and black pepper to taste. Set aside.

Grate the Comté

Using a grater, shred the Comté cheese and set aside for garnish.

Finishing Touches

Once the potatoes are done smoking, remove them from the smoker. Place them on a serving platter, sprinkle with fresh dill, and top with the grated Comté cheese.

Serve

Serve the smoked potatoes warm, alongside the scallion crème fraîche for dipping.
