Pork Sausage Preparation

    Prepare the Shallots

    Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the thinly sliced shallots and fry until they are golden brown and crispy, about 5-7 minutes. Remove from heat and drain on paper towels. Set aside.

    Mix the Sausage Ingredients

    In a large mixing bowl, combine the ground pork, green curry paste, chopped cilantro, chopped basil, salt, and black pepper. Use your hands or a spatula to mix until all ingredients are well incorporated.

    Form the Sausages

    Divide the pork mixture into equal portions and shape each portion into a sausage link, about 4-6 inches long. You should get about 8-10 sausages depending on the size.

    Cook the Sausages

    In the same skillet, add the remaining tablespoon of vegetable oil and heat over medium-high heat. Add the formed sausages and cook for about 4-5 minutes on each side, or until they are browned and cooked through. The internal temperature should reach 160°F (70°C).

    Serve

    Once cooked, remove the sausages from the skillet and let them rest for a couple of minutes. Serve topped with crispy fried shallots and extra fresh herbs if desired.
