Steak Preparation

Prepare the Steak

Take the Black Angus Flat Iron Steak out of the refrigerator and let it sit at room temperature for about 30 minutes.

Season the Steak

Rub the steak with olive oil, then season generously with salt and black pepper on both sides.

Grill the Steak

Preheat the grill to high heat. Grill the steak for about 4-5 minutes per side for medium-rare, or until it reaches your desired doneness.

Melt the Fontina

In the last minute of grilling, place the shredded Fontina cheese on top of the steak and close the grill lid to melt the cheese.

Mushroom Topping

Sauté the Mushrooms

In a skillet, melt the butter over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.

Add the Wild Mushrooms

Add the sliced wild mushrooms to the skillet and cook for about 5-7 minutes, until they are tender and golden brown. Season with salt and pepper to taste.

Gorgonzola Cream Sauce

Prepare the Sauce

In a small saucepan, heat the heavy cream over medium heat until it begins to simmer, stirring occasionally.

Add Gorgonzola

Reduce the heat to low and stir in the crumbled Gorgonzola cheese until melted and smooth. Season with salt, pepper, and chopped chives.

Assembly

Plate the Steak

Once the steak is grilled and topped with melted Fontina cheese, place it on a serving plate.

Top with Mushrooms and Sauce

Spoon the sautéed wild mushrooms over the steak, then drizzle the Gorgonzola cream sauce on top.

Serve

Garnish with additional chopped chives if desired and serve immediately.
