Flatbread Preparation

Make the Dough

In a large mixing bowl, combine the all-purpose flour, salt, and baking powder. Mix well.

Add Water and Oil

Gradually add the warm water and olive oil to the flour mixture. Stir until the dough comes together.

Knead the Dough

Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

Roll Out the Dough

Divide the dough into two equal portions. Roll each portion into a flatbread shape, about ¼ inch thick.

Cook the Flatbread

Heat a skillet over medium heat. Cook each flatbread for about 2-3 minutes on each side until golden brown and cooked through.

Topping Assembly

Prepare the Crab

If using fresh crab meat, ensure it is picked over for shells. If using canned, drain and rinse.

Assemble the Flatbread

Spread a thin layer of remoulade sauce over each cooked flatbread. Evenly distribute the crab meat on top.

Add Cheese

Sprinkle shredded mozzarella cheese over the crab meat, ensuring even coverage.

Melt the Cheese

Place the flatbreads under a broiler or in a hot oven (about 400°F) for 2-3 minutes until the cheese is melted and bubbly.

Garnish and Serve

Remove from the oven, sprinkle with fresh parsley, and serve with lemon wedges on the side.
