Preparation

    Prepare the Vegetables

    Chop the ripe tomatoes, onion, garlic, carrot, and celery into small pieces for even cooking.

    Wash the Basil

    Rinse the fresh basil leaves under cold water and gently pat them dry with a paper towel.

Cooking

    Sauté Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté for about 5 minutes until the vegetables are softened.

    Add Garlic

    Add the minced garlic to the pot and cook for an additional 1-2 minutes until fragrant.

    Combine Tomatoes and Broth

    Stir in the chopped tomatoes, vegetable broth, sugar, salt, and black pepper. Bring the mixture to a boil.

    Simmer the Soup

    Once boiling, reduce the heat to low and let the soup simmer for about 20-25 minutes, or until the tomatoes are soft and flavors meld.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. Alternatively, carefully transfer the soup to a blender in batches and blend until smooth.

    Add Fresh Basil

    Stir in the fresh basil leaves and let the soup simmer for an additional 5 minutes.

Serving

    Serve Hot

    Ladle the hot tomato basil soup into bowls and serve immediately. Optionally, garnish with additional basil leaves or a drizzle of olive oil.
