Prepare the Wings
In a large bowl, season the chicken wings with salt and black pepper. Make sure they are evenly coated.

Marinate
Let the wings marinate in the refrigerator for at least 30 minutes to enhance the flavor.

Make the Glaze
In a saucepan over medium heat, combine soy sauce, brown sugar, honey, sriracha sauce, lime juice, minced garlic, and grated ginger. Stir until the sugar dissolves and the mixture starts to simmer.

Thicken the Glaze
Continue to simmer the glaze for about 5-7 minutes, stirring occasionally, until it thickens slightly. Remove from heat and set aside.

Fry the Wings
In a deep skillet or fryer, heat vegetable oil over medium-high heat. Carefully add the marinated chicken wings and fry for about 8-10 minutes or until golden brown and cooked through. Remove wings and drain on paper towels.

In a large mixing bowl, toss the fried wings with the prepared Thai glaze until they are fully coated.

Transfer the wings to a serving platter. Drizzle with extra Thai glaze if desired and garnish with chopped scallions. Serve with ranch dressing on the side.
