Method

Crust Preparation

  1. 1

    Combine Crust Ingredients

In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined and the mixture resembles wet sand.

  2. 2

    Press into Pan

Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in a preheated oven at 350°F (175°C) for 10 minutes. Remove and let cool.

Cheesecake Filling Preparation

  1. 3

    Mix Cheesecake Ingredients

In a large mixing bowl, beat the softened cream cheese with granulated sugar until smooth and creamy. Add the sour cream, vanilla extract, and cornstarch, mixing until fully incorporated.

  2. 4

    Add Eggs

Add the eggs one at a time, mixing on low speed after each addition until just incorporated. Be careful not to overmix.

  3. 5

    Bake Cheesecake

Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the oven at 325°F (160°C) for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.

  4. 6

    Chill Cheesecake

Remove from the oven and refrigerate for at least 4 hours, or overnight for best results.

Caramel Preparation

  1. 7

    Make Caramel Sauce

In a saucepan over medium heat, melt the granulated sugar. Stir continuously until the sugar is fully dissolved and turns a golden amber color.

  2. 8

    Add Butter and Cream

Remove from heat and carefully whisk in the unsalted butter until melted. Slowly add the heavy cream while continuing to whisk. Return to low heat and stir until smooth.

  3. 9

    Add Sea Salt

Stir in the sea salt, mixing until fully incorporated. Allow the caramel to cool slightly.

Assembly and Serving

  1. 10

    Top Cheesecake with Caramel

Once the cheesecake has chilled, pour the warm caramel sauce over the top, allowing it to drizzle down the sides.

  2. 11

    Garnish

Sprinkle the chopped toasted walnuts over the caramel topping and finish with a light sprinkle of sea salt.

  3. 12

    Serve

Slice the cheesecake and serve chilled, enjoying the combination of creamy cheesecake, warm caramel, and crunchy walnuts.
