Preparation

Cook the Fettuccine
Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside.

Prepare the Filet Mignon
Season the filet mignon with salt and pepper on both sides. In a large skillet over medium-high heat, add a tablespoon of olive oil. Once hot, add the filet mignon and sear for about 4-5 minutes on each side for medium-rare. Adjust the time according to your desired doneness. Remove from the skillet and let rest.

Sauté the Shrimp and Mushrooms
In the same skillet, add another tablespoon of olive oil if needed. Add the exotic mushrooms and sauté for about 3-4 minutes until they are tender. Then, add the shrimp and cook for an additional 3-4 minutes until they turn pink and opaque.

Prepare the Garlic Cream Sauce
While the shrimp and mushrooms are cooking, prepare the house-roasted garlic cream sauce if not already made. Combine roasted garlic, heavy cream, salt, and pepper in a saucepan over low heat. Stir until heated through, and adjust seasoning as necessary.

Combine Ingredients
In a large serving bowl, combine the drained fettuccine, sautéed shrimp, mushrooms, and the garlic cream sauce. Toss gently to coat everything evenly.

Serve
Slice the rested filet mignon and place it on top of the fettuccine. Serve immediately with additional garlic cream sauce on the side if desired.
