    Prepare the Clams

    If using fresh clams, clean them thoroughly under cold water and chop them coarsely. If using canned clams, drain and set aside.

    Chop Vegetables

    Dice the potatoes, chop the onion and celery, and mince the garlic. Set aside in separate bowls.

Cooking

    Sauté Vegetables

    In a large pot, melt the butter over medium heat. Add the chopped onion, celery, and garlic. Sauté until the onion is translucent, about 5-7 minutes.

    Add Potatoes and Broth

    Add the diced potatoes to the pot and stir. Pour in the chicken or vegetable broth and bring the mixture to a boil. Once boiling, reduce to a simmer.

    Season the Chowder

    Add the thyme, bay leaves, salt, and black pepper. Simmer for about 15-20 minutes, or until the potatoes are tender.

    Add Clams and Cream

    Stir in the clams and heavy cream. Continue to cook for an additional 5 minutes, allowing the flavors to meld.

    Final Touches

    Remove the bay leaves from the pot. Adjust seasoning if necessary.

Serving

    Ladle the clam chowder into bowls. Garnish with chopped fresh parsley and optional bacon bits. Serve hot.
