Gorgonzola Dressing

Prepare the Steak

    Season the Steak

    Rub the flat iron steak with olive oil, salt, and black pepper on both sides.

    Cook the Steak

    Heat a skillet over medium-high heat. Add the seasoned steak and cook for about 4-5 minutes per side for medium-rare, or until your desired doneness is reached. Remove from heat and let it rest for 5 minutes before chopping.

Prepare the Salad

    Combine Salad Ingredients

    In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, thinly sliced red onion, walnuts, dried cranberries, and crumbled warm bacon.

    Add the Steak

    Once the steak has rested, chop it into bite-sized pieces and add it to the salad mixture.

Make the Dressing

    Mix Dressing Ingredients

    In a small bowl, combine the gorgonzola cheese, mayonnaise, buttermilk, white wine vinegar, garlic powder, salt, and black pepper. Whisk until smooth.

Assemble the Salad

    Drizzle the gorgonzola dressing over the salad and toss gently to combine all the ingredients.
