Steak Preparation

    Cook the Steak

    Season the 8 oz. flat iron steak with salt and black pepper. Heat a grill or skillet over medium-high heat and cook the steak for about 4-5 minutes on each side for medium-rare, or until your desired doneness. Remove from heat and let it rest for 5 minutes before chopping into bite-sized pieces.

    Prepare the Salad Base

    In a large bowl, combine 4 cups of chopped lettuces, diced tomatoes, and thinly sliced red onion. Add 0.5 cups of walnuts and 0.5 cups of cranberries, mixing them gently to combine.

    Cook the Bacon

    In a skillet, cook 4 slices of bacon over medium heat until crispy. Remove and let drain on paper towels, then crumble into pieces.

    Add the Steak

    Once the steak has rested and been chopped, add it to the salad mixture along with the crumbled bacon.

Dressing Preparation

    Make the Gorgonzola Dressing

    In a mixing bowl, whisk together 0.75 cups of gorgonzola cheese, 0.5 cups of mayonnaise, 0.25 cups of buttermilk, 2 tablespoons of white wine vinegar, 1 teaspoon of garlic powder, and season with salt and black pepper to taste. Adjust seasoning as necessary.

Final Assembly

    Serve the Salad

    Drizzle the gorgonzola dressing over the salad and toss gently to coat. Serve immediately with additional gorgonzola cheese if desired.
