Flatbread

Method

Flatbread

  1. 1

    Make the Dough

In a large bowl, combine the all-purpose flour, baking powder, and salt. Mix well.

  2. 2

    Form the Dough

Gradually add water and olive oil to the flour mixture. Mix until a soft dough forms. If the dough is sticky, add a little more flour.

  3. 3

    Knead and Rest

Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

  4. 4

    Roll and Cook

Divide the dough into 6-8 equal pieces. Roll each piece into a flat circle. Heat a skillet over medium heat and cook each flatbread for 2-3 minutes on each side until golden.

Spicy Thai Shrimp

  1. 5

    Prepare the Sauce

In a medium bowl, mix together coconut milk, red curry paste, lime juice, and fish sauce. Stir until well combined.

  2. 6

    Sauté the Aromatics

In a large skillet over medium heat, add a little oil and sauté the minced garlic and grated ginger for about 1 minute until fragrant.

  3. 7

    Cook the Shrimp

Add the shrimp and sliced red bell pepper to the skillet. Cook for about 3-4 minutes until the shrimp turn pink.

  4. 8

    Combine and Garnish

Pour the prepared sauce over the shrimp and bell pepper. Stir to coat and cook for an additional 2-3 minutes. Remove from heat and garnish with chopped cilantro.
