Preparation of Steak

    Seasoning the Steak

    In a small bowl, combine chili powder, cumin, garlic powder, salt, and black pepper. Rub the spice mixture all over the sirloin steak.

    Cooking the Steak

    Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the seasoned steak and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from skillet and let it rest for 5 minutes before slicing into thin strips.

Cooking the Breakfast Potatoes

    Preparing the Potatoes

    In the same skillet, add 2 tablespoons of olive oil and heat over medium heat. Add the diced potatoes, paprika, salt, and black pepper.

    Cooking the Potatoes

    Cook the potatoes for about 15-20 minutes, stirring occasionally, until they are golden brown and tender.

Making the Omelette

    Whisking the Eggs

    In a bowl, whisk together the eggs until fully combined. Season with a pinch of salt and pepper.

    Cooking the Omelette

    In a clean skillet, heat a little olive oil over medium heat. Pour in the whisked eggs and let them cook for a minute until the edges start to set.

    Adding Fillings

    Once the edges are set, add the shredded cheddar cheese, black beans, pico de gallo, and sliced steak on one half of the omelette. Fold the other half over the top and cook for another 2-3 minutes until the cheese melts.

Serving

    Plating the Dish

    Carefully slide the omelette onto a plate. Top with diced avocado, a drizzle of chipotle aioli, and cilantro lime sauce. Serve alongside the breakfast potatoes.
