Add Tomatoes and Beans
Stir in the canned diced tomatoes, kidney beans, and black beans. Mix well to combine.

Season the Chili
Add the chili powder, cumin, paprika, salt, black pepper, and cayenne pepper to the pot. Stir until the spices are evenly distributed.

Simmer the Chili
Pour in the chicken or vegetable broth, stir to combine, and bring to a boil. Reduce heat to low and let the chili simmer uncovered for at least 30 minutes, stirring occasionally.

Prepare Toppings
While the chili is simmering, prepare the toppings by shredding the cheddar cheese, chopping the scallions, and setting out the sour cream.

Serve the Chili
Once the chili is cooked and flavors have melded, ladle it into bowls. Top each serving with shredded cheddar cheese, a dollop of sour cream, and a sprinkle of chopped scallions.
