Preparation

    Peel and Chop Potatoes

    Peel the Russet potatoes and cut them into even-sized chunks, about 1-2 inches each.

    Prepare Garlic

    Peel the garlic cloves and set aside.

Cooking

    Boil Potatoes

    Place the chopped potatoes in a large pot and cover them with water. Bring to a boil over high heat and add a pinch of salt. Reduce the heat to medium and cook for about 15-20 minutes, or until the potatoes are fork-tender.

    Cook Garlic

    In a small saucepan, add the peeled garlic cloves and cover them with water. Bring to a boil and cook for about 5 minutes to soften the garlic.

    Drain and Mash

    Once the potatoes are cooked, drain them in a colander. Return the potatoes to the pot and add the softened garlic. Use a potato masher or fork to mash the potatoes and garlic together until smooth.

Mixing

    Add Olive Oil and Almond Milk

    Gradually add the olive oil and almond milk to the mashed potatoes, mixing until creamy and well combined. Adjust the amount of almond milk to achieve your desired consistency.

    Season

    Season the mashed potatoes with salt and black pepper to taste. Stir in the chopped fresh chives just before serving.

Serving

    Spoon the garlic whipped potatoes into a serving dish and garnish with extra chives if desired. Serve warm.
