    Prepare the Vegetables

    Peel the jicama and cut it into matchstick-sized pieces or small cubes. Shred the green cabbage finely. Grate the carrot using a box grater or food processor. Dice the red bell pepper into small pieces. Chop the fresh cilantro roughly.

    Combine the Vegetables

    In a large mixing bowl, combine the jicama, shredded cabbage, grated carrot, diced red bell pepper, and chopped cilantro. Toss them together gently to mix.

    Make the Dressing

    In a small bowl, whisk together the lime juice, olive oil, honey or agave syrup, salt, and black pepper until well combined.

    Dress the Slaw

    Pour the dressing over the vegetable mixture in the large bowl. Toss thoroughly to ensure all the vegetables are coated with the dressing.

    Chill and Serve

    Let the slaw sit in the refrigerator for at least 30 minutes to allow the flavors to meld. Serve chilled as a refreshing side dish.
