Heat the Oil
In a large, deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil is at the correct temperature for frying.

Dry and Fry the Potatoes
After soaking, drain the potatoes and pat them dry with a clean towel to remove excess moisture. Carefully add a batch of potatoes to the hot oil, being cautious not to overcrowd the pot. Fry the potatoes for about 5-6 minutes, or until they are golden brown and crispy.

Drain and Season
Using a slotted spoon, remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. While they are still hot, sprinkle with salt and black pepper to taste.

Serve with Ketchup
Transfer the fries to a serving platter. Serve immediately with ketchup on the side for dipping.
