Prep the Glass
Chill a rocks glass by filling it with ice water and setting it aside while you prepare the cocktail.

Mix the Ingredients
In a mixing glass, add the sugar cube and douse it with the Peychaud's bitters. Muddle the sugar and bitters together until the sugar is dissolved.

Add the Rye
Pour in the rye whiskey into the mixing glass with the muddled sugar and bitters. Add ice and stir the mixture until well chilled, about 30 seconds.

Prepare the Glass with Absinthe
Empty the ice water from the chilled rocks glass. Add the absinthe to the glass, swirling it around to coat the inside thoroughly. Discard any excess absinthe.

Strain and Garnish
Strain the chilled rye mixture into the prepared rocks glass. Express the lemon peel over the drink by holding it over the glass and giving it a good twist to release the oils, then drop the peel into the glass as a garnish.
